Chicken Cacciatore
Ingredients
- 2 chicken breasts 
- 1/2 tsp Italian seasoning 
- 1/2 tsp onion powder 
- 1/2 tsp garlic powder 
- 1/2 onion 
- 1 tsp basil 
- 1 bell pepper 
- 1 c mushrooms 
- 1 1/2 c chicken broth 
- 1 can rotel 
- 1 c cherry tomatoes 
- Olive oil 
- Pepper 
Method
Heat your skillet or cast iron on medium-high heat with about 1 tbsp of olive oil. Season the chicken breasts with the Italian seasoning, onion powder, garlic powder & pepper. Add chicken to the skillet. Cook for about 3-5 minutes each side and then remove from skillet. Add mushrooms..give them a minute or two and then add the chicken broth to deglaze the skillet. Add remaining vegetables and seasonings! Bring to a boil. Add the chicken back to the skillet and red heat to low, cover, and cook for an additional 10-15 minutes.
I served over Banza rotini noodles and topped the chicken with a little bit of a parmesan+ mozzarella blend!
