Eggplant Lasagna

Eggplant Lasagna

Eggplant Lasagna..this is another one of our favorite meatless meals! Think you don’t like eggplant? Try it! It has become a staple in my kitchen. Don’t want to try it? Then swap for zucchini and follow the same recipe!

Ingredients

  • 1 eggplant

  • 1 jar of Rao’s marinara or arrabiata

  • Ricotta cheese

  • Parmesan/Mozzarella blend

  • Olive oil ⠀

Method

Pre-heat oven on 400. Slice the eggplant into thin rounds. Drizzle with olive oil. Roast for about 20 minutes or until the eggplant is nice and tender. Remove from oven and begin assembly line! Cover the bottom of your baking dish with a little marinara sauce. Then begin layering the eggplant, ricotta, sauce, repeat. Sometimes I add spinach, or zucchini too.😋

Make sure the last layer is sauce-topped with Parmesan and mozzarella. Also-in my pictures you’ll notice I didn’t use that much cheese. It doesn’t take a lot to make it delicious!🙌🏻 ⠀

Bake on 350 for about 30 minutes! ⠀
