Quinoa + Black Bean 'Burgers'

Quinoa + Black Bean 'Burgers'

 

Ingredients

  • 1 can black beans (drained)

  • 1/2 can of corn

  • 1 tbsp green dragon hot sauce

  • 1 small onion chopped fine

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1 cup cooked quinoa

  • 1/2c gluten-free breadcrumbs

  • 1/4c chopped cilantro

  • 1/4c shredded cheese

  • 2 eggs beaten

  • 2 tablespoons avocado oil for cooking

Method

Using the directions on the package, cook 1 cup of quinoa. Once prepared, relocate to a large mixing bowl to cool for 10 minutes. While the quinoa cools, drain a can of beans and mash using a fork, food processor, or immersion blender. Once the quinoa has cooled, add all ingredients, except the avocado oil, to the mixing bowl. After mixing - create patties to your desired size and place on a cookie sheet. (My batch made 7) Next place the patties in the freezer for 10 minutes. Only remove the amount of patties you would like to eat. They keep well in the freezer! In a large pan, heat 2 tbsp of avocado oil on medium heat, cook each side for at least 3-5 minutes.
