Chicken Cauli Fried Rice

I had just returned from San Francisco with a nearly empty refrigerator. I did not want to go to the grocery store so I I threw this recipe together with what I had..If i would've had eggs, I would've added 1 to give it more of that fried rice flavor but I didn't and it was still so tasty! 

Ingredients

  • 2 chicken breasts
  • 2 tbsp liquid amino's
  • 2-3 tbsp chili paste
  • 1 tsp sesame oil
  • 1 tbsp honey 
  • sesame seeds
  • 2 green onions
  • shredded carrots
  • 1 package of cauliflower pearls 

Method

Start by cubing the chicken. Then get a medium sized mixing bowl and add all of the ingredients above besides the cauliflower pearls and sesame oil. Mix all the ingredients so that the chicken has a nice marinade all over. Next you will heat the sesame oil in a wok or large sauce pan on medium and add the chicken. Brown the chicken for a few minutes and then add in the cauliflower, stir & cover. Cook for about 5 minutes and then cover with sesame seeds and cook for about 5 more minutes without the lid. Also-once I added everything into my wok I added 1 more tbsp of chili paste. We love hot flavor..if you don't then keep it t0 2 tbsp. 

I cooked short grain brown rice for my husband so that he could get a little more carb and not be hungry 30 minutes later. You will see in the picture that his has it under the chicken and cauliflower.
