Rotisserie Chicken Tacos

 

If you follow me on Instagram, you know that I buy a rotisserie chicken every week and create different recipes for lunch or dinner throughout the week with it. 

This is on my weekly rotations of meals, rotisserie chicken tacos and black beans. I either serve over a spinach and romaine mix for a taco salad or corn tortillas.  It is a QUICK, easy & delicious recipe!

Ingredients

  • 1 c - 1 1/2 c chicken

  • 1/3 c of tomato sauce

  • 2 tbsp green chiles

  • A sprinkle of onion, garlic & cumin powder.

Method

In a medium sized skillet, head up to green chiles over medium. When they start to sizzle add in the chicken and seasonings. Cook for about 5 more minutes! 

For the black beans, I used a can of low sodium black beans drained, 2 tbsp green chiles (or if you have mini green chile cans then the remaining can and then microwave for 3 minutes or until hot) Cover with a paper towel to prevent a mess in your microwave. Enjoy!🐝
