These turned out so good! There is a variety of things you could do with these “fritters” or veggie patties, whatever you want to call them. If you have zucchini, add that too! Onion would’ve been a good addition too. Great served over a bed of spinach and romaine and enjoy with a salad—or put them in between a bun and eat like a burger..or enjoy them plain as I did! They reminded me of a crab cake—sans the crab ha! Enjoy!
4 yellow squash
1 c carrots
1 tbsp gluten free bread crumbs
1 tbsp parmesan
A sprinkle of onion powder, garlic powder, and cayenne if you like a little kick!
Grate the squash and carrots. Add remaining ingredients and stir until everything is mixed well! Heat a swiller over medium with 1 tbsp olive oil. Form patties with your hands and add to the skillet. Cook on each side for about 5 minutes!
