Huevos Rancheros

Huevos Rancheros

Weekend brunch plans? Here you go!

Ingredients:

  • Eggs

  • Salsa

  • Black beans

  • Corn tortilla

  • Avocado

Method:

Spray pan with non stick. Crack your eggs into the pan on medium. Cook for 1 minute then add salsa if your choice. All around, but trying to avoid the yolk! Cook for a couple more minutes, reduce the heat and cover. Covering is optional..if you like your eggs super runny it isn’t necessary. If you like it to cook over on top of the yolk but still runny than just cover for a few minutes for that egg white to cook on top of the yolk. Heat up a tortilla! If you’d like to get it crispy like a chip, heat in a skillet with olive oil then flip after a couple minutes. I like heating mine directly on the fire for less of a mess. Layer the beans on top of the tortilla, followed by ranchero eggs and avocado. Enjoy!
