One Pot Pasta

Ingredients

  • 1 zucchini

  • 1 bell pepper

  • Brocolinni

  • 1 C mushrooms

  • Half a box of pasta (Banza bow ties was my choice)

  • A sprinkle of red pepper flakes, onion powder, garlic powder

  • Lots of pepper

  • EVOO

  • 2-2 1/2 c water

Method

On medium high heat, sauté all of the veggies in a large pan and add some pepper. Once the veggies are nice and tender, add in the pasta of your choice and 2 cups of water. Bring to a boil and cover! If 2 c of water isn’t covering all of the pasta, then add a splash more. You want everything to be covered in water, but not drowning! Cook covered for 5-7 minutes. Reduce heat to low, sprinkle in all the seasonings, give it a good stir, try a noodle to make sure it is cooked to your liking (I like mine al dente). I heated up some of the Trader Joe’s Harvest Alfredo sauce and topped my pasta off with a big ole spoonful of it. If you’d like to keep it dairy free, then obviously don’t add the cheese!
