Tex-Mex Feast

I have been meaning to share my moms Mexican rice with you all for a while, but every time I make it..I forget to take pictures of the process! Well that pretty much happened a few nights ago when I made it again. This feast is reoccurring in our home! My mom has been making these HEB fajitas for years..when I moved to Dallas I was sad because we don’t have HEB but I quickly found out the Central Market sells the HEB Carne Guissada and Chicken Fajitas! If you don’t live in Texas, that means you dont have CM OR HEB…Check your local grocery store for seasoned carne guisada/chicken fajitas..I’m sure they have it..they just might not be as good as these! Ha!

Ingredients

Meat

  • 1 package of HEB/Central Market seasoned chicken fajitas

  • 1 package of HEB/Central Market seasoned carne guisada

Rice

  • 1 c white rice

  • 1 small can tomato sauce

  • 1 can corn (drained) + optional

  • 1 chicken bullion cube

  • 1/4 tsp cumin

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 2 c water

Brown the rice with a little bit of olive oil. Once browned add all ingredients! Bring to a boil, cover, reduce to a simmer and cook for about 20 minutes or until all liquid is absorbed. Make sue the bullion cube has dissolved before covering.

Beans

  • 1 can pinto beans

  • 1/2 jalapeno chopped

  • 1/4 c onions

In a small pot, add all ingredients, bring to a boil then reduce heat to a simmer and cook for about 20-30 minutes.

Salsa

  • 1/2 onion chopped

  • 6 jalapeños

  • 5 whole tomatoes

  • 1 can of diced tomatos

  • onion powder, garlic powder, salt & pepper

Blend on high until it has reached the consistency that you would like!

These are the EASIEST fajitas ever! They are better than all the Mexican restaurants we go to and so so simple. They are already seasoned! All you have to do is grill them..the grill time for chicken depends on the thickness. It ranges from 10-20 minutes, flipping halfway through. Add bell peppers, onions or any desired grilled veggies you would like with your fajitas!

Carne Guisda—Just as simple and delicious as the chicken fajitas! Heat with 1/2 tbsp olive oil in a large pan. Brown each side of beef, add 1/2 c of salsa and 1/2 c crushed tomatoes or 1 can of rotel. Simmer for 40 minutes! This beef is soooo tender, we love making this!

This makes a LOT of food! We like to eat throughout the week for lunch or dinner!
