BBQ-esque Salmon + Coconut Rice

I really branched our last night from the typical maple sriracha salmon I make. BBQ-esque salmon recipe inspired by one my favorite accounts, @amandafrederickson !! β €
Salmon Rub:
1/2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tbs olive oil
A few sprinkles of salt
Method:
Preheat oven on 450. Mix everything in a small ramekin, rub the salmon, cook for 10-12 minutes for a medium salmon. πŸ˜‹

Coconut rice~ This is a MUST with this salmon. It pairs so well together with the Smokey salmon and sweet rice! Y’all it is sooo good.
1 c jasmine rice
1 can full fat coconut milk (Thai Kitchen is my favorite brand)
1/4 c water
Salt


Bring all the ingredients to a boil. Reduce heat to a simmer, cover. Cook for 20 minutes, remove from heat. Let it rest for 5-10 minutes and then fluff with a fork!
Sautéed spinach: olive oil, salt, pepper & a squeeze of fresh πŸ‹
