Chicken Lettuce Wraps

Chicken lettuce wraps from Pei Wei and PF Chang's have always been a favorite. I have been wanting to try to recreate them for YEARS and I have just never attempted. It always seemed complicated and too many ingredients. I got some inspo from Frugal Living chicken lettuce wrap recipe, whom I found on Pinterest. Anyways, I tried this recipe last night by swapping out some ingredients from her recipe, adding a few ingredients and simply making it my own. For example I used Amino Acids instead of Soy Sauce. I thought there is no way this recipe is going to turn out, I'm not going to be able to share it yet because its just not going to taste as good as I want..I thought there would be a lot of tweaking to do...well I was wrong. They turned out better than I imagined. I cant wait for you guys to try this recipe out. It might be my new favorite!! 

Ingredients

  • 2 tbsp sesame oil
  • 1 c. mushrooms, chopped (I used portobello because I had some leftover from a recipe!)
  • 1 lb. ground chicken
  • 2 garlic cloves, minced
  • 1 tbsp basil, finely chopped
  • 1/4 c green onions (or more)
  • 1/2 c shredded carrots 

Sauce

  • 2 tbsp hoisin sauce
  • 2 tbsp teriyaki sauce
  • 1 tbsp liquid aminos (natural soy sauce alternative)
  • 1 tbsp organic rice vinegar
  • 1 tbsp chili garlic sauce (this recipe definitely had a kick..if you don't like spicy cut this down)

Method

In a small ramekin or mixing bowl, combine the hoisin sauce, teriyaki sauce, liquid aminos, rice vinegar, and chili paste (or sriracha). Mix well! 

In a medium wok or skillet over medium heat, heat 1 tablespoon of the sesame oil. Add the mushrooms, and cook, stirring occasionally, until golden brown and softened, transfer to a plate and set aside. Add 1 more tablespoon of sesame oil to the wok, add the chicken and cook until done, about 5 minutes, crumbling the meat as it cooks. Drain fat, if needed. Add the minced garlic, stir for 30 seconds. Add the mushrooms back into the skillet sprinkle in the basil leaves and add the carrots; stir.

Add the sauce to the wok and stir for 3 more minutes, spoon the chicken into your lettuce cup and enjoy!
